Making breakfast foods is about one of the easiest meals to make, however, to make an omelette that tastes more like it was created in an upscale bed and breakfast you can try your hand at the Bitter Sweet Veggie Omelette.
What You’ll Need:
- Eggs – 3 to 4
- whole milk – 1 – 2 tbsps
- Mild cheddar (shredded) – 1/2 cup
- sweet peppers (orange, red, yellow) – diced
- asparagus – chopped
- vegetable oil – 1 tsp
- onions – diced
- butter – 1 tbsp
- spices – rosemary, ground thyme, ground black pepper, sea salt, onion powder
Saute the onions in olive oil in a frying pan on medium high heat – before they turn golden brown, add the peppers, turn the heat to medium low heat, allow them to simmer.
Combine the milk and eggs in a bowl, whisk with a fork, add butter to a separate frying pan on medium heat, after the butter has melted, spread it around on the pan, add eggs to the frying pan, allow to cook lightly for about 45 seconds to a minute, add the onions and peppers.
Add spices to desired taste. I would say sprinkle only a bit of sea salt, ground thyme and rosemary, you can be generous with the pepper and onion powder.
In the pan used for the peppers and onions, add your asparagus (you can add a little more vegetable oil) allow to cook on medium high heat for about 2 minutes. Remove from heat.
Place shredded cheddar cheese on top of eggs, allow to melt briefly then add the asparagus on top. Sprinkle a little more ground pepper and sea salt on top of the asparagus.
Remove from heat and using a spatula, gently remove from frying pan and place on a dish.
The delicious veggie medley is held together with melted cheese and egg, the first bite will have the lightly bitter taste with a crunch of asparagus followed by the mild sweetness of cheddar cheese, sweet peppers and onions. A colorful and tasty omelette that is sure to satisfy your taste buds.
