Easy to Make Fresh Spring Salads

Healthy, tasty and energizing, fresh salads make the perfect lunch on a warm spring day. Even if you are not the greatest cook, salads are easy to make, all you need is the right ingredients.  I recommend picking up your herbs, veggies and fruits from a local farmers market if you have one nearby. The produce is usually fresher and cheaper than a grocery supermarket. Some people find it easier to just grab a salad to go but if you make your own, you can save money and also add that touch of love and attention that makes a meal absolutely delicious! Below are 3 very basic scrumptious salads you can make quickly and easily:

Green Salad with Strawberries and Goat Cheese:

Start with your foundation of baby spinach greens. Add in some thinly sliced strawberries, fresh chives, crumbled goat cheese and chopped pecans. You can even top it off with some grilled chicken if you want to add a little extra protein to the mix.

Mixed Green Simple Salad:

Combining a variety of different greens can have stellar results! Frisée, radicchio and arugula are slightly bitter greens that can be mixed with mellow-flavored greens such as red leaf lettuce, romaine, and baby spinach. Add a few cherry tomatoes, thinly sliced red onions or cashews for an extra kick. Top it off with any dressing of your choice – I recommend a basic vinaigrette or citronette dressing for both a fit and tasty choice.

Traditional Greek Salad:

Use a head of romaine lettuce as the base ingredient. Tear it up into bite-size pieces. Coarsely chop 3 large plum tomatoes. Peel and coarsely chop 1 English cucumber. Cut 1 medium red onion into thin rings – make sure to soak them in a small bowl of ice water for 10 minutes to make them less sharp. Cut 1 small green pepper into thin rings. Add ¾ cup of kalamata olives and ¾ cup of crumbled feta cheese. Mix them all together.  To make a delicious dressing to go with your Traditional Greek Salad, use 6 tbsps of olive oil, 1 ½ tbsps of fresh lemon juice, 1 tbsp of red wine vinegar, mince 2 garlic cloves and 1 tsp of dried oregano. Whisk all of the dressing ingredients together. Finally, mix both the salad and dressing for one exceptional salad!
